Beets are one of the most heart healthy foods. They help us produce nitric oxide which dilates our blood vessels and lowers blood pressure.



Recipe

6 beets

3 stalks of green onion, thinly sliced

goat cheese to taste

2-3 tbsp balsamic vinegar

2-3 tbsp olive oil

1/4 cup sunflower seeds


Method

Place the beets in a steamer basket and steam for 1 - 1.5 hrs until they’re fork tender. Be sure to top up the water in the pot to avoid having it all evaporate and you end up with a black pot (you’ve been warned).

Once the beets are tender, plunge them in cold water. The skin should now be very easy to peel off with your fingers or a veggie peeler.

Dice into 1cm cubes and place in a bowl.

Add remaining ingredients and toss.
